Furo

When you walk into Furo, you cannot help but notice the attention to detail in every single corner. You immediately feel that this place has been carefully planned, and indeed it has. The head behind the project is Martin Eder. Although Furo has only been around for a few years, it is already one of the most established restaurants in Salzburg.

Furo, much like its Japanese name meaning "Flow," has flown from a smaller restaurant with two induction plates and a back oven to its current spacious location. With now five cooks and a great kitchen, we have the feeling it will keep on flowing.

Martin has a brilliant talent for combining flavors, and even the simplest things taste special coming out of his kitchen. As I sat down with him to learn more about his story, he would always give due credit to his friends. For instance, when I asked him about his genius focaccia, he said, "I got the recipe from @‌brotschwester," then proceeded to tell me about them: "She is actually a tattoo artist" and explained how good they are at what they do. In my experience, you find this kind of humbleness among people who excel at their craft because they have invested tons of hard work into it, or in this case, hours in the kitchen perfecting the focaccia recipe.

If you walk into Furo at anytime of the day, you will see Martin serving coffee, planting a Ficus tree in the garden, talking to guests, or doing whatever needs to be done. And you can actually go to Furo anytime of the day. Open from 10:00 to 22:00^*, you can get brunch all day, dinner, and my personal favorite: the lunch menu. As it changes every week, you get to try all sorts of creative dishes at a great price.

To me personally, Furo has redefined the word vegetarian. As I struggled to eat less meat, I was stuck eating salads or vegetarian pasta. At Furo, Martin can take something as simple as a focaccia sandwich and transform it into an explosion of flavors, where vegetables are almost always the stars of the show. I say "almost" because one of my favorites, the Bikini Furado, is basically a cheese sandwich, but one of the best you will have.
